I'd like to add a theme option to add Google Analytics code to the front end's <head>
section.
What is the options.php code to create an input box which won't strip <script>
from the input?

A better approach would be to have the user simply enter their tracking script ID. You know, something like UA-XXXXXXX-XX
?
Then in your header.php
, output the standard tracking script:
