Shortcode to show the number of custom post type taxonomy

Question

I would like to create a shortcode to show the number of taxonomies of a certain custom post type:

I would like to show with the shortcode the number of "coupon_stores" and if is possible another shortcode to show the number of "coupons".

Any ideas? Thanks
