To help save you some time: the post IDs returned in that query are 602, 603, 604, and 605.

That var_dump() output an array of post objects, where each array index is a different post object. You should be able to look through them, and find the ID for each post, and then verify if the IDs correspond to the ID for attachment images that have the people category.

What's important is: did $people_attachments return post objects for attachment images with the people category?

How many attachments have the people category? What do you get from a var_dump( $people_attachments )?

comment 404 hijack in WooCommerce
Recovering from hacks is explicitly off-topic, per our scope. Also, the hack is specific to WooCommerce, not to WordPress.

So how do you know that the search template is not being shown? Are you testing with a valid search term?

"..but I also want to create a demo page in which I'll show the different Blog layouts options..." - that's a separate issue, that can/should be handled separately. You shouldn't change the way that users configure core options, merely to facilitate a Theme demo.

"But I want to give theme users the option to have a static page as the Home page of the site, and also allow them to have a different page for showcasing their blog posts." WordPress has this feature out-of-the-box, by configuring Settings -> Reading -> Front Page Displays. By using a custom page template for the blog posts index, you short-circuit this core functionality. Instead, you should support the core functionality.

comment Custom theme won't use search.php
What have you done to debug? If you remove your searchform.php, and search using the default search form, does your Theme's search.php load properly? If you remove your custom filter, does your Theme's search.php load properly?

The main query already exists in template-hierarchy template files. It is found in the $wp_query global, which is referenced by default when calling have_posts().
