Whitelisting is more of a general security philosophy to avoid vulnerabilities as outlined here: codex.wordpress.org/Data_Validation#Validation_Philosophies the array notation is automatically converted into an array so this &options[]=blue&options[]‌​=red will become equivalent to $_GET['options'] = array( 'blue', 'red' ). I know this is not solving your problem. It's just general advice to make things easier and less error prone.

If possible, you should white list the URL parameters and register them via the query_vars filter. Then, I'd use the array notation in the URL: example.com/?size[]=large&size[]=small&options[]=green&options[]=blue&options[]‌​=red

What did you do to install your blog at /posts? There are many ways to do this but I suspect you created a page and set it as a posts page in the reading settings - is that correct?

As long as you use a custom table, you will need custom MySQL statements to get to your data. There is no way WordPress can know what's outside the standard table structure without custom coding.

Why not create a meta box on the edit post screen and test for the meta values whenever you render the widget? If the custom meta values have not been filled, default to the global widget values. Let me know if you need more hints than that.

Judging from the code your provided you are using a full page reload to set $upload_image1 so in theory you could simply use <img src="<?php echo $upload_image1 ?>" />. However, with the new Media Library it's not common to perform a page reload when selecting an image but rather hook into the "User selects image"-event. Please add more code so we can better understand your situation.
