Sure, just replace "AND post_type = \'post_type_name\'" with the code to fetch the post_type_name from $_REQUEST (suitably escaped) and make sure you search form includes a hidden field with your value.So "<input type="hidden" name="post_type" value="somename" />" and substitute into the query

Only thing I can think of is, that there is an additional checkbox field/input parameter of the same name="x" being added to your post form. A plugin is adding a meta box perhaps and trashing/resetting the contents of $_POST. Check if the same issue occurs with all other plugins disabled.

It might be preferential to put those defines in wp-config.php instead. On a side note, if you can edit files with the file editor, so can a malicious plugin or a hacker, so having WordPress files and folders, editable by apache/WordPress is a bit of a bad thing really. Edit the file via (S)FTP is the preferred method. (As is uploading plugin updates)

To be honest and this is my opinion. If you are using a plugin to do this, you are not developing your site properly. As your development site won't be a true model of the live site. You should look at using version control for file management.

A better way than trying to use the path to the plugin is to test for any constants that wp-seo creates (or classes), because if I installed wordpress-seo I might not put it in the wordpress-seo folder. But in this case wp_head should always work to hook on as wpseo_head should call wp_head

comment Sending all emails using SMTP
As you have tried two separate plugins. Sounds like your host could be blocking the outbound connection and/or has it's own SMTP service in the way and is blocking. Check with your host to see if they allow out bound SMTP, some shared hosts don't to stop spammers using their services. If all you want to do is change the email your email comes from there are other alternatives. This question covers that solution adequately wordpress.stackexchange.com/questions/12368/…
