I'm going to be using the Product CSV Import suite with WooCommerce to import products from a CSV file, but I'd love to have an automated way to do this via Cron if possible.

Has anyone seen examples of this being done, or know of any documentation for doing something like this?

You can automate this with the wpallimport plugin, as its got a specific option for cron...

At least its what I do with my woo sites.
