I want to be able to gather custom data from the user and have it associated with a product when the product is added to the cart.

I also want to be able to display this custom data along with the associated product in the cart.

I'm not using Variations and would prefer to keep it that way.

I also don't want to use the Gravity Forms plugin.

So basically I need a way to store some meta data associated with a specific item in the cart and display it on the cart page.

Any suggestions?

What I recommend is that you download some really simple plugin which pretty much does what you want and then make a few minor modifications to it.

The plugin I have in mind is the free WooCommerce Gift Wrapping Plugin -> http://wordpress.org/plugins/woocommerce-product-gift-wrap/

It's a single php file of 300 lines long and it already meets every single one of your requirements.
